Ginger Scallops


So simple and so good, I died and went to heaven...You can do it in 5-10 minutes depending on your chopping skills :)

Ingredients


6-8 sea scallops
2 finely chopped garlic cloves
1cm finely chopped fresh ginger root
1/4 teaspoon olive oil
1/2 teaspoon butter
salt and pepper
cilantro or basil for garnish

Preparation

Heat oil and butter on a skillet and add garlic and ginger. Cook for about 30 seconds till soften.

Add scallops and sprinkle with salt and pepper. Cook for about 5 minutes. Make sure not to overcook the scallops. Any fish or seafood is just horrible when overcooked and dry. Check it after 3 minutes and only if they are still raw inside continue cooking.

Garnish with fresh cilantro or basil. You can squeeze some lemon juice as well.

It goes great with crisp white wine such as a Souvignon Blanc or AlbariƱo.
