Jaiba Rellena (stuffed crab)

Ingredients:
Olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
3 tomatoes, finely chopped
2 tablespoons of parsley, finely chopped
400gr crab meat
15gr olives, finely chopped
30gr capers, finely chopped
35gr almonds, pealed and chopped
Salt & Pepper
Pinch of oregano
10 crab shells
bread crumbs
butter

Preparation:
  1. In a hot pan, fry the onion and garlic. Add tomatoes and parsley and fry for about 10 minutes.
  2. Add the crab meat and when the mixture dries up a bit, add the olives, capers, and almonds. Season for taste with salt, pepper, and oregano.
  3. Preheat the oven to 190C.
  4. Fill the shells with the crab mixture and top with a little bit of butter and sprinkle with some bread crumbs.
  5. Bake for about 10-15 minutes. Serve warm.
