Chile Paste




Ingredients:

2 handfuls of dried chile of your preference (poblano, guajillo, pasilla, etc.
1 cube vegetable bullion
1 garlic clove
1 tablespoon of chopped cilantro
salt and pepper

Preparation:

1.  In a large pot, cover the dried chiles with water and bring to boil together with the cube of bullion (or you can use a home made bullion if you can make it :). Boil for about 20 minutes until the chiles become soft.

2.  Take out the chiles and remove seeds and peel off the skin. The skin should be peeling off easily.

3.  In a mixer, mix the peeled chiles with garlic and cilantro. Add some water in which you boiled the chiles (enough so you reach the desired consistency). Add salt and pepper for seasoning.
